Warrigal Greens are a green leafed vegetable native to SE Qld, and one of the first native foods to travel the reverse path of being adopted by European kitchens. It can be used in the same way as Spinach.The plant is a perennial, is drought tolerant and well adapted to the region.Like most types of "spinach", Warrigal Greens contains oxalic acid, but in higher levels. Its therefore essential to blanch in water, remove and refresh in cold water before using.
