The point is the Lamington is delicious, and deceptively simple. At the time of its supposed invention around 1900, coconut wasn’t really a thing in Anglo cuisine. To impress the dinner guests French chef to Qld Governor Lord Lamington, Armand Galland, added chocolate to his French vanilla sponge, then an exotic coating of desiccated coconut, inspired by his Tahitian wife.
