Grind your own flour for maximum nutrition. Spelt is an ancient grain that is highly sought after for its low gluten content and wonderful nutty flavour. The Plain flour has the bran removed. Grown Biodynamically using a 3 year field rotation. Why is spelt more expensive than wheat? Its is lower yielding, has a longer growing season and needs to be husked before use. All of which is worth the effort once you taste it!
