Preorder your Hams now for delivery in mid December - just in time to prep them for Christmas. The date at checkout will be for next week, not mid-December, please disregard this. Place your order as usual (selecting whatever date is shown) and we will hold on to it until Christmas week deliveries.

Premium heritage bred, free range, pasture raised ham from the Mayne family at Piggy in the Middle, in Kilkivan. Traditionally ‘old fashioned’ wood smoked, bone-in.

The full leg ham should comfortably cater for around 20 people for lunch (or a smaller group with lots of delicious leftovers!). Half legs also available.

The ham is provided to you already cured and cooked, and ready to eat. It is also delicious sliced and served cold. Alternatively, it can be glazed and heated in the oven.  Glazing is just an option if you want to infuse a bit more flavour into the ham and eat it warm.

STORING YOUR HAM:

  • Rinse your Ham Bag in a solution of water and one tablespoon of vinegar and squeeze out the excess.
  • Remove the ham from the plastic wrapping and wipe it clean with a damp cloth.
  • Place your ham in the Ham Bag and refrigerate.
  • Rinse out your Ham Bag every 3 days to retain freshness.
  • Keep your Ham Bag moist.

ABOUT THE PIGS

Piggy In the Middle ham comes from a special cross of heritage pig breeds (Berkshire, Duroc, Landrace and Saddle Back), chosen for their nature and characteristics - not the number of piglets they produce. This gives us great marbling with the right amount of fat coverage for a delicious ham.

They move the pigs regularly for a significant impact on the health of both the pigs themselves, and the soil. Regular rotation ensures they have access to the minerals and nutrients available from fresh pasture, as well as keeping them away from their manure.

Importantly, providing them with fresh water and muddy wallows to exercise in every day, allows them to express their “pigginess”. And this in turn, makes a huge difference in the flavour and nutrition of their meat. Producing a well marbled, natural flavoured, juicy, bold and hearty meat. You really can taste the difference.
