The proteins, fats and carbohydrates are pre-digested during fermentation, making them easy to digest and the nutrients more bio-available. It's rich in enzymes, high in fibre, and a good source of iron, potassium and calcium. It contains no preservatives and is not pasteurised, therefore it's extremely perishable. It's been made in this way for thousands of years in Indonesia, so you're getting an authentic tempeh with a fresh nutty taste. Just like Indonesian tempeh, it's best eaten in the first 3 days after production.
Larah freezes hers immediately after production for us. Frozen tempeh will maintain it's condition for up to 6 months. Please freeze it as soon as you receive it - once defrosted, use it as soon as you can for the freshest taste.
