From this day forth, never waste celery again. If you're like Michelle and are often left with half a bunch of celery at the end of your box here, are some of her tips:
1. The Salad (not one, but 2 great salad ideas):
Using super thinly sliced celery, add walnuts, figs and a blue cheese vinaigrette. Or why not lighten up a Caesar Salad by adding celery heart stalks into the mix. Snappy, crunchy, awesome, and very easy!
2. Celery Juice (try it first thing in the morning):
Celery Juice is a hot topic in the natural health arena right now and even though there isn’t specific research on drinking celery juice, the science does seem to agree that celery is a healthy food to eat or drink. If you receive a set box with celery I can highly recommend you try this refreshing celery juice next week.
3. Soup!
I am a believer that you can make soup from anything, but when I told my family that I was going to make celery soup they all laughed ... well guess who's laughing now? ... we all are, because celery soup is delicious! Have a quick Google to find some recipes
4. Caponata
Caponata is a Sicilian dish made from chopped and sauteed eggplant, tomatoes and celery seasoned with olive oil, raisins and olives, served with ciabatta - yum!
When used correctly, celery makes nearly everything else better.
