This recipe is another from local legend Clare Scrine, who's created a bunch of delicious dishes for us from one of our Large Vegetable Boxes. This slaw is super flavourful but really light, making a perfect accompaniment for a heavier side like the broccoli and cheddar croquettes. I also love it with haloumi and pickles on a burger, or with some crunchy chipotle tofu on a taco. Feel free to sub in extra greens like shredded kale or other grated veg such as carrot or zucchini. Unlike most salads, it will even hold for a day or two if you have leftovers.
1 large apple
1 cup (loosely packed) parsley, finely chopped
4-5 cos leaves
½ small cabbage
