We have a winner! Thank you to all those who entered our Cooking Out of the Box competition! Emma Healy your delicious Jacket Smashed Potatoes with Beetroot and Greens recipe knocked our socks off. Try it for yourself- see below for instructions.
Wash beetroot and scrub. Don’t dry off just place in a covered casserole dish and roast in the oven for an hour at 200deg or until soft. Allow to cool. Then you should be able to easily peel the beetroot.
Scrub clean the potatoes. Whole roast potatoes in the oven for an hour or until soft.
Sauté spring onions, silverbeet and garlic in a little oil and water. At this point I also added kangaroo mince but for the vegan players at home it works fine without.
Smash the potato and spoon over the greens/mince, chopped up beetroot and a dollop of cashew cheese. Finish with a squeeze of lemon, fresh parsley, dill, capers, salt and pepper and a squeeze of lemon.
