Food Connect Winter Porridge with Seasonal Fruit
A scrumptious and nutrient dense take on everyone’s winter favourite; this porridge is sure to please. It’s also the perfect opportunity to make the most of our wide range of ethically and sustainably sourced, Australian grown pantry staples, available thanks to our collaboration with Sovereign Foods. Soaking the oats overnight improves their digestibility and greatly increases the availability of their nutrients to our digestive systems. Top your porridge with juicy seasonal fruit, toasted nuts, peanut butter, preserves, or all of the above, and warm up on these chilly winter mornings!
½ cup rolled oats
1 tbsp linseeds
1 tbsp sultanas
1 tsp lemon juice
1 tsp cinnamon
¼ cup milk
1 tsp butter
1 ½ tsp honey or brown sugar
1 apple, grated
1 ripe pear, finely sliced
1 tbsp toasted almonds or macadamias
1 ½ tbsp peanut butter
2 tbsp greek yoghurt
2 tbsp seasonal compote (try date and orange!)
A night, or up to 24 hours ahead, combine the oats, linseeds, sultanas, and lemon juice in a medium saucepan, cover well with water, pop on the lid, and leave to soak on the stove, off the heat, overnight.
In the morning add an extra half cup of water, and bring to a boil. Once boiling, turn to medium- low heat, add cinnamon, stir, cover, and simmer for 5 minutes.
Meanwhile, prep your topping ingredients.
Stir well to make sure it’s not sticking, add a splash more water if needed, and continue to cook, stirring occasionally for a further 5 minutes, until the porridge has thickened.
Turn off heat, add the milk, salt, and butter, then stir well.
Spoon hot porridge into bowls, finish with your chosen combination of toppings and enjoy!
