One of the best things about stone fruit? How easily they're cooked down into sweet, jammy desserts, perfect with a huge scoop of vanilla ice cream in the hotter months.
This cobbler can be assembled in a jiffy using ingredients you probably already have on hand, and the peaches can be swapped out for any seasonal fruit - so give it a go then keep in your back pocket during the year!
Instructions
1. Melt butter in a baking dish, approx 30x20cm (not a huge deal if you have a different size, just keep an eye on the baking time)
2. Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
3. Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (again, don't stir!). Sprinkle with cinnamon or nutmeg, if you want.
4. Bake at 190°C for 40-45 minutes until golden brown. Cobbler can be enjoyed warm or cool!
